Team Members of Food and Beverage embody the hustle and bustle of teamwork and the essence of service by providing the very finest dining and event experiences for resort guests. Food and Beverage Team Members ensure attentive, professional service and behavior with all guests, creating loyal, repeat visitors.
The Food and Beverage Director successfully manages the daily operations of the resort’s dining outlets, both Front and Back of House, ensuring resort guests have pleasurable dining experiences while optimizing resort profits. Collaboration with the Sales Team, Banquet Manager, and Executive Chef while attending weekly BEO meetings ensure seamless events/banquets. The Director will undertake a number of major assignments throughout the year and enhance the coordination of departmental requirements and communication with Resort Management thereby improving the Team and guests’ experiences. Building effective relationships with guests and Team Members is an essential element of this position.
What you will do (includes but not limited to):
You will create training programs, manuals, SOPS, and departmental on-boarding programs. Hire and train team being mindful of the power of positive reinforcement, provide redirection as necessary, and ensure all team is in compliance with policies and procedures. Create and adopt departmental Career Pathways development and team retention plans. You will collaborate with the Executive Chef to plan menus and determine costs, create SOPs for preparation and presentation of food and drinks, and adherence to quality and safety standards. Monitor food, liquor, and labor costs, ensure costs do not exceed resort guidelines. Forecast requirements, record labor and inventory costs while monitoring daily, weekly, and monthly sales. Monitor food presentation and service. Work with Professional Development to arrange required team training (liquor Commission and ServSafe). Be observant and proactive for any potential challenges, read and evaluate expressions and body language. Quickly respond to any issues, be aware that guests and Team Members will be witnessing your interactions and conduct. Provide follow through with Guest Recovery. Conduct Skype interviews and maintain a working knowledge of USCIS visa requirements for international team (hours, positions, and administering training plans). Control ambiance by controlling lighting, linen service, glass/dinner/flatware quality and placement. Follow established New Hire Guidelines, collect required documentation and signatures, ensure management team has a clear understanding of the process. Communicating in a clear, professional manner is an essential aspect of this role. You will hold yourself to higher standards and be a role model at all times.
Qualities and characteristics of a resort Food and Beverage Director include being courteous, professional, energetic, and articulate.
Minimum requirements for this position include a strong command of written and oral English, have above average computer and point of sale competencies, know and understand state liquor guidelines and all food handling regulations.
Minimum skills and abilities include the ability to remain focused in a hectic environment and the ability to provide clear, professional direction/communication to all guests and resort team.
Minimum education is high school diploma, college preferred.
Minimum required experience is 5+ years as a resort restaurant manager.
Physical elements: Extended hours on feet; various temperatures/noise levels; lift and transport heavy items; reach high/low objects; walk up/downstairs and around resort property.
